Do it on a second-tier holiday.

We chose New Year’s Eve, but I’ve seen amazing weddings on Valentine’s Day, July 4th, Halloween, etc. People WANT to have plans on those days, so give them plans! And boom: a de facto theme.

(And the reality is that no matter what date you choose, it won’t work for someone important.)
